Super Easy! Chicken Enchiladas

This recipe has to be one of the easiest things I have made recently! I was very surprised with how quickly they were made, and how simple it was!

Chicken Enchiladas

2 chicken breasts
1 can diced tomatoes
1 onion
1 tbsp olive oil
1 container philadelphia cooking creme santa fe flavored (recipe on back of this container)
shredded cheese
8 inch flour tortillas (it says use 6 inch, but don't, it won't work!!)

-preheat oven to 350
-cook chicken, slice to whatever size you want
-cook onions and diced tomatoes in oil, in a deep pan, on stove at medium temperature.
-Once chicken is cooked and cut, combine with onions and tomatoes, let simmer for about 5 minutes
-Put in large mixing bowl, add 3/4 of the container of santa fe cooking creme, and shredded cheese, mix together.
-spoon mixture down center of each shell -- you should have enough to fill 8 shells
-spread rest of cooking creme on top and sprinkle with cheese
-bake for 15-20 min (until cheese is melted)

Does it have to be Santa fe cream or can I use another?

Good question! I don't know that it would taste the same, as the santa fe creme is what really gives it the flavor, however, I'm sure you could use the original if you don't like the flavors of the santa fe creme. It does make it a little spicy, so I'm sure the plain one would give it the right texture without the spice. Maybe add a little taco seasoning if you're looking for a little more flavor to it.
